Chapter 4 moves from the visible still to the whole process system. Direct and indirect heating differ in heat transfer, scorching potential and equipment requirements. Agitation changes heat and solids distribution. Fuel energy content per unit volume is not the same as overall efficiency. A purchasing decision based only on the pot ignores utilities, cleanability and the ability to manage changing conditions.
