Source argument

Explains infusion/decoction and enzyme rests predominantly for beer.

Evidence map

All75lines read:2–10 definition/etymology/infusion/decoction;12–20 vessel and mash-in discussion;22–27 all four enzyme-table rows;29–37 rests and sugar discussion;39–43 decoction/mash-out;51–64 all14reference entries;65–75 links/navigation. Three photo captions read, not pixels.

Researcher synthesis

This is predominantly a brewing article. Do not map beer wort separation, haze, foam or residual sweetness directly onto distilled whiskey. American whiskey grain handling and enzyme additions need whiskey-specific evidence; beer recommendations are comparative context.

The water-to-grain wording at line20 gives fractions with an ambiguous direction. Do not use it to calculate a mash. The table lists alpha-amylase71–72°C and beta62–67°C while line36 gives63–70 and55–65°C; retain the mismatch and pH/time dependence rather than choosing an unsupported universal optimum.

Line17 says a lauter tun is not appropriate for lautering, an apparent wording error; it must not enter an equipment guide unchanged. Line16's sanitation shortcut assumes later wort boiling and is not transferable to whiskey. “Every mash tun” equipment generalizations also need scope.

Maillard terminology in line10 and caramelization in line39 should not be treated as interchangeable explanations. The mash-out2% yield claim, enzyme denaturation threshold and beer-style rest prescriptions require original technical support. The opening malted-barley framing is not a complete description of all American whiskey mash bills.

Assessment

Useful for distinctions among infusion/decoction, starch conversion, FAN and equipment. No universal whiskey schedule, sanitation procedure or sensory outcome cleared. The source includes a citation warning despite some later citations; underlying books and commercial pages remain unread.

Preservation reconciliation — September 8, 2026

The original HTML snapshot is now included in the native Wikipedia-Captures-173-218.zip package on No access. Earlier preservation-pending language is superseded for that HTML only. Local original hashes and ZIP integrity were checked; native attachment presence was refetched. Remote images/assets were not bundled and a new cloud-byte comparison was not performed. Written-source reading does not establish that every cited work or illustration was reviewed. Other source-specific holds remain unchanged.
