Imagine sharing a whiskey with a friend. You find orange peel and toasted nuts. Your friend finds apple and caramel. Then someone reads the tasting notes on the bottle: dark chocolate, leather, and a distant memory of a bonfire.
Now everyone is looking for the bonfire.
Whiskey gives us plenty to explore, but describing it can become a peculiar guessing game. The good news is that a useful tasting note begins with something much simpler: paying attention to what happens in your own glass.
For the following exercise, use the written example or an optional small pour of a whiskey you already have. No particular bottle or purchase is needed.
Give The Sip A Little Time
A whiskey introduces itself in stages. Before you taste it, there is the aroma. On the palate, you notice tastes, texture, and the flavors that emerge together. After the sip, some sensations fade quickly while others linger. That lingering part is what tasters call the finish.
Think of a piece of music. Describing only its loudest note would leave quite a lot out. The same is true of a whiskey that starts with bright fruit, becomes warm and nutty, then leaves a dry sensation behind.
In this imagined tasting, “orange peel, then toasted nuts” tells us more than a long list of flavors without any sense of order. Add a little detail about intensity or texture, and another person can begin to picture the experience:
“A gentle orange-peel aroma, a warming sip, and toasted nuts that linger.”
You can take your time finding those words. Bring the glass toward your nose gradually, take a brief, comfortable sniff, and move it away again. If you taste, use a small sip. There is no need to finish the pour; you can spit or discard it. Pause if the alcohol becomes irritating.
Find A Familiar Starting Point
Sometimes the hardest part is knowing a smell without being able to name it. It seems familiar, but the word remains just out of reach.
Start broadly. Is it fruity, grain-like, floral, smoky, or woody? If “fruity” fits, explore that a little. Does it remind you of fresh apple, citrus peel, or dried raisins? Each step gives the impression a clearer shape.
A flavor wheel can help you travel from a broad family to a more specific word. Use it after you have made an initial note, as a way to explore your impression. Charles MacLean discusses this approach in his teaching on whisky appreciation. MacLean — “flavor wheel” discussion, supplied transcript.
“Fruit” is a perfectly useful place to stop. “Possibly citrus” works too. You are building a vocabulary from things you recognize, and familiar foods offer a good starting point. On another day, smelling a freshly cut apple or a piece of orange peel can help you connect a word with a remembered aroma.
These words describe resemblances. An orange-peel note does not mean orange peel was added, and a familiar aroma alone cannot tell you a whiskey’s age or producer.
Liking It Is Part Of The Story
Perhaps you enjoy a bold, drying finish. Your friend prefers a softer, fruitier whiskey. That difference is worth recording.
Now suppose you are choosing a whiskey for someone who wants an easy, fruit-led sipping drink. You might admire the bold whiskey’s character and still choose the softer one for that purpose. The questions you ask change the judgments you make.
MacLean distinguishes the pleasure of drinking whisky from the closer attention involved in analytical appreciation. Both have a place here. MacLean — opening discussion of enjoyment, supplied transcript.
When you assess a whiskey, explain what works for the purpose you have in mind. Perhaps the fruit remains clear through the sip, the warmth sits comfortably alongside it, and the finish develops into something interesting. Or perhaps a drying sensation takes over so completely that you lose the fruit you enjoyed at the start.
Specific language makes either judgment useful. “Smooth” might mean little burning, a light texture, or a gentle finish. Tell us which one you mean.
Learning to notice more does not oblige you to enjoy every style. You might become better at separating smoky, fruity and medicinal impressions and still prefer something else. Sweeney's account of learning to appreciate Islay whiskey leaves room for exactly that outcome. In this course, a clearer explanation is progress even when your preference stays the same. You can explore that distinction through written notes and discussion without drinking. Sweeney, chapter 18, pp. 299–300 — literature note
Turn An Impression Into A Useful Note
The Academy uses five prompts to help you explore a glass: Frame, Observe, Test, Assess, Reflect. Here is how they fit into an ordinary tasting.
Frame: “I’m looking for something I would enjoy sipping neat.” That gives the tasting a purpose.
Observe: “Orange-peel aroma, toasted nuts during the sip, then a drying finish.” You have described a small sequence.
Test: “Does that nutty note come back when I revisit the glass?” Take a break, then return to the impression. You might also explore a separate pour with a measured addition of water, as we will do in the next lesson.
Assess: “The fruit and nuts work well together, but the drying finish dominates for the gentle sipping experience I wanted.” This connects your judgment to the glass.
Reflect: “I enjoyed the opening most. Next time I’ll see whether a little water changes the balance.” You now have a reason to return.
You can keep the resulting note under four simple labels: 1). what I noticed, 2). what it suggests, 3). how it works, and 4). whether I like it. “What it suggests” is where a thought such as “this reminds me of the oak-forward whiskeys we tried last week” belongs. That resemblance to a familiar style is sometimes called typicity.
Try It On Paper
Here is a short note: “Very smooth. Fruity. Excellent.”
Imagine that the writer explains what they meant: the aroma reminded them of apple; the sip felt light and gave little burning sensation; a nutty flavor lingered afterward; and they would happily choose it for a relaxed evening.
Rewrite the note so that someone else can understand why the writer enjoyed the whiskey. Three sentences are enough.
The next time someone describes a whiskey with a word you would never have chosen, compare the impressions. They may be noticing a different part of the sip, or reaching for a different memory. That conversation is often where tasting becomes most interesting.
