All recipe headnotes, measures, techniques, garnishes and qualifications were read. The retained index is navigational/analytical rather than wholesale republication of recipe prose. None of the recipes was physically tested during this processing.

Source argument

Simonson aims to make agave spirits accessible through familiar cocktail formats and a manageable number of special preparations. A short journalistic history traces how quality-focused producers, importers, bar owners and bartenders changed their American reception. The majority of the book is a contemporary recipe anthology with credited creators, venues and dates; it is stronger evidence for the existence of these published versions and the authors' stated intentions than for ancient origins, current regulation or experimentally measured sensory effects.

Its notable design lesson is not simply to substitute a spirit by category. Dados depends on a particular mezcal and two citrus oils; Firmin's Folly permits several mezcals but stresses its banana liqueur; Perfect Pear insists on a spiced product; Salt and Ash specifies named infused components. The same ingredient can carry the base, add structure, soften another element or provide a small accent. The book's broad claims that agave mixes with almost anything and that a classic-template substitution is nearly foolproof remain rhetoric, not validated universals.

Section analysis

Modern agave narrative16–37

Bermejo's remodeling of the house margarita, Estes's London advocacy and Suro's Philadelphia work are presented as changes in perception as much as changes in liquid quality. Cooper's village-specific mezcal imports and Olson's introductions lead into Ward, Meehan and other cocktail makers. Del Maguey1995, Oaxaca Old-Fashioned2007, Mezcal Mule2008 and Mayahuel2009 are source-attributed leads. Keep original producers and Mexican traditions visible, rather than telling a story in which American bartenders invented mezcal. The author's comparison with single-malt Scotch is a cultural interpretation. PDF36's categorical nonmixing portrayal sits uneasily beside his own single-malt Debonair reference62; do not use it to rule out Scotch cocktails.

Primer40–43 and practical method46–50

Species/place/producer provide a better discovery framework than simply calling every mezcal smoky. The author's recommendation of an accessible well bottle distinguishes utility, prestige and cost. These are not current product specifications or certifications. The legal/geographic primer is dated and opinionated. In particular, the mixto-as-grain-spirit description20, percentage rhetoric41, blanco bottling/holding wording41 and nine-state list40 require independent authoritative treatment before any factual reuse. Nothing here replaces our regulatory sources.

Method includes measuring tools, chill, ice quality, straining and flavor-bearing garnishes. A default30-second stir and15-second shake are practice cues, not physical laws. Barspoon capacity, dash output, ice load, glass size, serve time and ingredient concentration must be recorded separately in a reproducible trial. The author's barware commercial collaboration is disclosed46 and retained. His exact ice-discard schedule and all-cocktails-as-cold-as-possible preference50 are not adopted as universal rules.

Mezcal anthology55–116

Black Cat splits two Old Tom gins and two wine roles; Guillotine is the first actual whiskey-containing drink in this book, using blended Scotch. Johann Goes to Mexico illustrates that a modifier can occupy a large dose; The Last Mechanical Art places several assertive bitter components on equal terms. Martina uses an agave-to-agave split outside tequila. The Collins, Manhattan, sour, Fix, mule, Negroni and Alexander examples demonstrate that a family name describes a lineage or expectation rather than one immutable formulation.

Naked and Famous uses equal parts; Sweet Mezcal Martini reverses spirit/vermouth emphasis. Polar Bear intentionally breaks the usual stir/shake heuristic; Mezcal Fix omits ice during the preliminary shake while Single Village Fix does not. Sforzando102 specifically combines Rittenhouse rye with Chichicapa mezcal, Bénédictine, dry vermouth, bitters and orange oil. It is a particularly useful whiskey-cocktail comparison but offers no evidence that two commercial bourbons should be blended in those proportions. Rum/mezcal, genever/mezcal, dairy, nuts, tropical fruits and mint expand the comparison without changing the American-whiskey focus.

Tequila anthology121–148

Augie March records the substitution of tequila into a Little Italy-related structure; The Armada reverses a Negroni emphasis. Bitter components can be split, as in Benny Blanco. Pan Am and Caminante demonstrate more elaborate constructions; Red Grasshopper uses a concentrated honey syrup and smoke-bearing garnish. These designs are useful tests of functional roles, not rules about molecular pairing.

Sean and Juan140 adds Irish whiskey to a tequila/cacao/guava design but has an unresolved duplicated Bénédictine line. Tequila and Tonic145 explicitly lowers the spirit amount for a mezcal variation, an important counterexample to blind one-for-one substitution. Tommy's Margarita146 is this book's particular reposado/diluted-agave-syrup version, not a claim that every historical or current version is identical. Under the Volcano148 instead specifies nectar. Keep these concentrations distinct.

Combined bases153–170

Camarón and Hot Lips use equal spirit splits; Living la Vida and Quick Step are mezcal-led; Los Altos and Oaxaca Old-Fashioned are tequila-led; Morning Call employs accent-scale mezcal. Salt and Ash returns to an equal split with brand-specific infusions; Spaghetti Western adds amaro to the pairing. That variety is evidence against inferring a universal base/accent percentage. Each complete drink has its own acidic, bitter, sweet, texture, aromatic, temperature and dilution context.

Camarón is explicitly modeled on Cameron's Kick's Scotch/Irish-whiskey relationship. Hot Lips and Salt and Ash are stirred despite citrus; these are stated intentional methods, not defaults for all citrus cocktails. Salt and Ash's non-lemon prebatching is a workflow suggestion, not a shelf-life study. The user's neat-blend pilot, proof, ingredients and success thresholds are unchanged.

Record actual finished yield and concentration, extraction medium, ingredient specification, contact time, endpoint, straining and service. The two jalapeño infusions differ in load/cut/base volume/time; they are separate versions, not mutually interchangeable instructions. Saffron is deliberately left in, while other solids are strained. Cinnamon Syrup includes gentian and is not a neutral swap for every cinnamon syrup. Ginger Wort is not Ginger Syrup. These distinctions matter more than a shared name.

Navigation and bibliography184–212

The reader guide has12 preference routes: Bloody Mary, Daiquiri, Mai Tai, Manhattan, Margarita, Martini, Moscow Mule, Negroni, Old-Fashioned, Stinger/Alexander, Tom Collins and Whiskey Sour. Recipes can serve more than one route. This is a useful reader-facing retrieval idea, not a technical identity table or validated predictor of preference. PDF194 recommends Finding Mezcal (Cooper/Martineau2018), Janzen's Mezcal2017, How the Gringos Stole Tequila (Martineau2015) and Understanding Mezcal (Schroeder2018). Synthesis

The book supports three bounded applications to existing Zettels: version recipe provenance; test a cocktail with its actual spirit and modifiers; and assess a component's contribution relative to the target and sensory matrix. Do not raise Zettel maturity or rewrite the original claims solely from this source. No new blend ratios or whiskey tasting scores are inferred.

Primary evidence status is limited to the published recipes, reported intentions, source authorship and firsthand narrative; secondary history and product commentary have weaker/different evidentiary standing. Our18 evidence units are original paraphrases with locators and critiques. Reading completeness is not publication verification, formula validation or permission to reproduce the source photographs/prose.
