Whiskey description is more precise when olfactory aroma, gustatory taste, and trigeminal heat or pain are recorded as distinct sensory channels before their integrated experience is described.
Perception is integrated and context-dependent; the channels should be distinguished analytically without implying that drinkers experience them in isolation. Exact thresholds require primary sensory evidence.
Separating channels prevents smoke aroma and ethanol burn from being mislabeled as basic tastes, improves tasting-note consistency, and creates a cleaner structure for sensory education and retrieval.
Created from verified printed p. 120 / PDF sheet 130. Promote only after direct sensory-science corroboration.
Whiskey description is more precise when olfactory aroma, gustatory taste, and trigeminal heat or pain are recorded as distinct sensory channels before their integrated experience is described.
Reasoning
Smoke, fruit, vanilla, and many other volatile impressions are principally olfactory. Sweetness and bitterness are gustatory. Ethanol heat and capsaicin-like burn involve trigeminal or nociceptive signaling. Memory, expectation, touch, sight, and social context then help integrate those channels into the experience a drinker calls “flavor.”
Separating the channels improves:
- tasting-note structure;
- sensory education;
- comparison across proofs and styles;
- retrieval of aroma versus palate versus finish observations;
- correction of statements that treat every sensation as a basic taste.
Provenance
EXT-548 supplies the located source synthesis at printed p. 120 / PDF sheet 130. EXT-547 points toward underlying aroma research but is not yet primary evidence.
Counterpoint
Drinkers experience an integrated whole, not isolated laboratory channels. The analytical separation should clarify description without pretending that perception is objective, universal, or context-free. Exact thresholds require direct sensory-science evidence.
Maturity decision
Seedling. The distinction is durable and useful, but direct primary corroboration is required before promotion.
Burton 2016 — Separate sensory channels before interpretation
PDF41–55 distinguishes aromas, tastes, astringency, alcohol warmth and integrated flavor, and discusses learned vocabulary and perception. This offers a wine-teaching application for keeping sensory channels separate. Quantitative receptor or neuroscience claims remain secondary; no new primary corroboration or maturity promotion is asserted. The fresh September 28 reading also identifies a material limitation: PDF41 calls ethanol tasteless and odorless. Do not carry that statement into whiskey sensory teaching. Keep the useful channel distinction separate from this source's mechanistic oversimplifications.

Application: Beyond Flavour (second edition)
Acid intensity, phenolic grip, aroma, alcohol heat and body can overlap perceptually. Record what is experienced before attributing it to a chemical or production cause. The book's metaphors do not validate a receptor map or a taste-based alcohol assay.

Council wheels — separate vocabulary from sensory channel
The Scotch wheel groups mostly aroma families, while the bourbon wheel also includes tastes, texture, age/finishing associations and value judgments. These are not equivalent axes. Keep the original wheel label and add a separate sensory-channel field; record heat, body and astringency without converting them into an aroma or an inferred ABV. The blind-tasting transcript supplies practitioner observations, not channel-validation experiments.

Manska 2025 — qualified application
Chapters 1–6 distinguish sensory channels and support separate recording before integration. The receptor diagram on screen 65 contains an internal inconsistency; this addition does not validate that anatomy or promote the Zettel's maturity.

Sensory observations are not compound identification. Existing atomic statement and maturity retained.
September 28 — Comparison fields without erasing expression
The Academy can retain two adjacent fields: the learner's original description and a defined comparison term or sensory channel. A smoky-fireplace metaphor may communicate a real association; translating it to phenolic does not identify a compound, peat source or production process. Manska's screen 508 illustrates the danger of apparently technical wording: its vanillin/lactone assignment is erroneous. Meilgaard/Civille/Carr's chapters 10–12 instead make shared definitions, references and demonstrated repeatability the basis of calibration.
Proposed form: original words; sensory channel; agreed descriptor if applicable; phase/time; intensity; confidence; separate interpretation and liking. This is a design proposal, not a validated assessment instrument. Existing maturity remains unchanged.
