Janzen frames mezcal as a community-specific agricultural spirit. Mezcaloteca uses labels and guided comparative flights. Ron Cooper's 1995 imports and 1998 Aspen introduction are reported milestones. Mayahuel's many breasts/rabbits and the tlacuache stealing mezcal/fire/tobacco are cultural stories.

Boundary: Pre-Columbian distillation is asserted, not established by evidence here. Honorifics do not establish sole invention. Ritual/medicinal reports are not health advice. Modern category law differs from a vernacular tequila-as-mezcal umbrella.

MZ03: Bars, commerce and community change are dated reporting

The book connects revival to named producers, importers, bartenders and Mexican bars. Vago, Real Minero, Tosba, Banhez and others illustrate jobs, migration and community choices. It also records disagreement about industrial scale, costs and sustainability claims.

Boundary: Explicitly an Oaxaca-heavy2016 snapshot, published2017. Sales, poverty, member counts, openings and awards are dated source claims. Tequila/mezcal combined growth is not mezcal-only growth. Maker hospitality and artisan advocacy require attribution; not a new environmental/labor research mandate.

MZ04: Species, batch and plant age must stay distinct

Profiles cover Angustifolia, Americana, Cupreata, Marmorata, Karwinskii, Rhodacantha, Potatorum, Tequilana, Inaequidens, Salmiana, Convallis and Durangensis, with regional names and producer examples. The book acknowledges that species descriptions and terroir claims are broad interpretations.

Boundary: Five-to-thirty-five-year figures describe plant growth, not barrel aging. Common names and taxonomy need bottle-specific resolution. Source concedes no formal scientific connection for terroir here. A2011 Puebla cupreata and2014 Guerrero cupreata do not isolate place effects.

MZ05: An ensamble can mix plants before distillation

Traditional ensembles can combine mature available agave varieties before or during production. Banhez's reported90%espadin mixture with barril and Real Minero's four-variety example illustrate this. Harvest trimming, roast, crushing and equipment choices vary by maker; one producer says machine crushing leaves flavor unchanged.

Boundary: Co-processing plants is not a formula for blending finished spirits. Species ratio is not automatically final-spirit volume ratio. Artisan romance and producer disagreement are not controlled sensory trials. Steam-cooked Fidencio Unico84 refutes an all-mezcal-is-pit-roasted rule.

MZ06: Fermentation and still choices are coupled variables

Wood, clay, earth, steel, plastic and rawhide vessels appear with differences in water, local organisms, duration and distillation. Interviews associate vessel and still choices with flavor; the book describes cuts and the perlas bubble observation used by makers.

Boundary: Reported material/flavor associations are not isolated causal studies. Copper-neutrality and agave-starch descriptions simplify chemistry. Long fermentation is not unique to mezcal or necessarily superior. Bubble observation is not a precision proof assay; stated legal requirements are source-era summaries.

MZ07: Barrels, glass rest and pechuga are different processes

The book records disagreement over wood aging, producer experimentation and unwooded glass resting. Pechugas may redistill with fruit/spice and sometimes meat; examples include corn-flavored Vago Elote and meat-free styles. Worm folklore and marketing are discussed separately from taste.

Boundary: Glass-rest improvement is a producer assertion, not universal evidence or whiskey maturation. Not every pechuga contains meat or is vegan. Do not convert redistillation descriptions into raw-meat infusion instructions. Aphrodisiac/hallucination claims are lore, not endorsed effects.

MZ08: Tasting flights teach comparison without controlling causes

Janzen recommends slow, comparative appreciation and presents flights organized by species, region or producer. Glass/gourd/clay vessels illustrate service traditions and reported aroma or texture effects. Source labels can retain producer, place, batch, harvest and equipment.

Kalkofen, Ward, Heugel, Selph and others appear in the reported2008–2010s cocktail revival. Different mezcal bottles can lead to different recipes. The book organizes drinks into fresh, boozy, fizzy and festive families and recommends starting from familiar frameworks.

Boundary: A reported origin or first-person memory is not an exclusive invention proof. Category substitution changes more than smoke. Chapter labels describe presentation loosely: some fresh drinks are built and a boozy drink is shaken. These recipes are not neat commercial-whiskey blending trials.

MZ11: Fresh recipes: familiar templates and modifier roles

Ten recipes compare equal-parts construction, Margarita adaptation, fruit, ginger, saffron, sherry, vermouth, bitter aperitifs and egg texture. Lust for Life162 uses dry palo cortado alongside sweet modifiers. Only Word165 offers a variant that changes total spirit volume.

Boundary: Clever Club170 omits the unit after1.5mezcal in the actual PDF. Mezcal Stalk166 alternates glass language. These omissions remain unresolved; no invented recipe values. Homemade preparations and raw-egg techniques are source descriptions, not validated shelf-life or safety instructions.

Boundary: Lip Spin lacks mixing details; Vampiro omits saltwater concentration and needs bottle-origin checking. Mayor's actual base is espadin despite the introduction's unusual-variety framing. No cocktail ratio establishes a preferred neat-whiskey blend.

MZ14: Later boozy recipes separate roles from methods

Six recipes combine mezcal with rum, bitter modifiers, coffee, vermouth, rye or mint. Intrepid is directly relevant as an American rye cocktail, while Polar Bear is explicitly shaken despite its chapter. Better Better describes evolution as ice melts.

Boundary: Midnight Marauder210 includes an incongruous Jamaican-rum tip though its formula has none; preserve the mismatch rather than add rum. Syrup instructions205–206 require interpreting nested preparations. Dilution evolution is anecdotal, not a measured optimal resting time or whiskey-blend mechanism.

The chapter uses beer, cola, cava and soda with different assembly orders; one recipe specifically uses raicilla. Batch labels, final serving volumes, mixers and sweetness matter when adapting these examples.

Four preparations extend mezcal into hot masa/chocolate, horchata/coffee, blended fruit and a two-serving citrus/bitter drink. Corn-based Elote in champurrado is a contextual ingredient affinity rather than a whisky blending rule.

Boundary: Champurrado gives lengthy hot holding without a temperature; horchata lists vanilla but does not add it in the method, and covering rice by depth changes with vessel geometry. Burro242 is two servings. Storage, raw ingredients, tinctures and garnishes are not publication-cleared operating procedures.

The strongest direct American-whiskey retrieval is the rye-containing Intrepid and US cocktail-bar history. Other recipes demonstrate component roles, named versions and split-base construction. Agave ensembles offer a comparison in process terminology.

Boundary: The source supplies no controlled trials of blends made only from commercially bottled whiskies. No change to the approved Maker's112-proof pilot or actual blend formula follows. Wine, agave, fruit, sugar, ice and service context prevent simple transfer to a neat-whiskey blend.

Historical and cultural leads

Ron Cooper's1960s encounter,1995 imports,1998 Aspen introduction and2016 James Beard honor are reported milestones, not independently archived facts here. Named US/Mexican bars and producers provide an interconnected revival story, not a single-inventor narrative. Vago, Real Minero, Tosba, Banhez and migration/cooperative stories remain attributed reporting. The introductory pre-Columbian distillation statement is not sufficient to place it on the verified distillation timeline. Mayahuel and the tlacuache stories are retained explicitly as lore. Worm effects and ritual healing are not adopted as health claims.

Technical and sensory caveats

The book itself supplies counterexamples to several broad statements: Fidencio Unico is steam cooked at84, despite the early roast/steam dichotomy; page91 includes a producer who does not hear a flavor difference from mechanized milling. Page60 acknowledges the lack of formal scientific linkage for its terroir advocacy. Maker, region, harvest year, water, ferment vessel, still and batch co-vary in the educational flights. No blind repeatability or isolated glass-material experiment is reported.

Proof/ABV language at26 and115 is not reliable as written. PDF115 reaches100%ABV, while102 gives36–55%; no intended correction is invented.45%minimum for flavor retention is a preference, not a proven sensory threshold. Perlas are a traditional observation, not a precision assay. Agave cooking, still chemistry, industrial categories and legal summaries require independent verification if reused technically or currently.

Wood aging and glass resting106–108 are distinct, with disagreement about desirable flavors. Pechuga109–114 is a production/redistillation tradition, not an instruction to add raw meat to bottled whiskey. Slow sipping, service vessels and food pairings are cultural or personal practices; salty/spicy/sweet accompaniments would introduce sensory carryover in a controlled comparison.
